Glazed Doughnut Muffin Recipe

I have got to share this tasty glazed doughnut muffin recipe with you all. I first came across it on Pinterest and I of course pinned it to my “Sweet Treats” board. I was a little intimidated to actually make the muffins, because the ingredients list was quite lengthy.

Then my sweet and beautiful friend, Rene Klobes started a blog called My Simple Kitchen. Rene posted the glazed doughnut muffin recipe and had the same fears, because of all the ingredients. Lets face it, a lot of us think something looks yummy…and then 10 ingredients later we’re like, yeah forget it. She explained how delicious the muffins are and that they actually weren’t that difficult to make. Thanks to Rene I decided to make them myself and wow, was my family happy I did.

Glazed Doughnut Muffin Recipe

They are soft and full of flavor, but not too terribly sweet. They are scrumptious with coffee in the morning or really any time of the day. Not to mention, after you make them you will look at them with pride and think to yourself, “Yeah, I made those….Mhmmm, all me!”

Here is the glazed doughnut muffin recipe…I hope you enjoy it as much as my family and I did.

Ingredients:

The Muffins:

* 1/4 cup butter
* 1/4 cup vegetable oil
* 1/2 cup sugar
* 1/3 cup brown sugar
* 2 eggs
* 1 1/2 tsp. baking powder
* 1/4 tsp. baking soda
* 3/4 tsp. ground nutmeg
* 1 tsp. cinnamon
* 3/4 tsp. salt
* 1 tsp. vanilla extract
* 2 2/3 cups flour
* 1 cup milk

Now lets get started:

1) Preheat oven to 425 degrees F.
2) Line 12-cupcake pan with cupcake liners.
3) Beat together butter, veggie oil, sugar, and brown sugar until smooth.
4) Add eggs, 1 at a time.
5) On low speed, add baking powder, baking soda, nutmeg, cinnamon, and salt.
6) Add flour and milk, alternating each. Start and end with flour.
7) Spoon batter into cups, filling them.
8) Bake for 15-17 minutes. Let cool in pan for a few minutes, then transfer out of the pan to cool completely.

The Glaze:

* 3 tbsp. butter, melted
* 1 cup confectioners’ sugar, sifted
* 3/4 tsp. vanilla
* 2 tbsp. hot water

1) Mix melted butter, confectioners’ sugar, vanilla, and water in medium bowl.
2) Dip muffin tops into glaze and hold upside down until glaze stops dripping.
3) Once glaze is hardened, dip muffins in glaze a second time.

Hello dolls!

Ok, so lets just get right into this, who doesn’t love getting new things….ummm, pretty much no one. I know I love it. I’m not always a big fan of the going out to the mall and getting new stuff, because blah…it’s the mall. Retail therapy is a thing and it helps… especially on days like today. Another reason I try to do this is because of my Fiance. He is literally my inspiration on so many levels, but seriously, he bounces out of bed like he has springs inside his feet. Hair Therapy Weapons

I want to share my two healthy hair therapy weapons with you all.

My hair goes to my lower back and is pretty healthy.

Rainy Days in Hunter Rain Boots

Hello!

We have been getting lots of rain the past few days, here in California. I am not a huge fan of constant rain…I was born and raised in Oregon, so I’ve had my fair share of rain. Since moving to California I have acclimated…and well, now I’m a spoiled brat, weather snob! Haha…ok, I’m not that extreme.

California has been in the middle of a quite nasty drought, so the rain is a blessing. There is something refreshing about it raining here for the past few days. The rain cleanses the earth, nourishes nature, and cleans the slate. It’s like a shower for the earth. [Read more...]
