Hello fellow food lovers!
I don’t know about you, but I LOVE FOOD. Unfortunately food doesn’t love me back…or it loves me too much, because it likes to hang around and give me muffin tops. How rude! I’m always looking for recipes that are low calorie, or that I can manipulate into being low calorie. I like to get a lot of bang for my buck - what I mean by that is if I can eat a lot of food for a little amount of calories VS. a little bit of food for a lot of calories, I am going to choose the first!
I’m a huge fan of tacos, so I came up with this yummy little recipe. It is low cal, low fat, and gluten free! Gluten makes me feel really yucky, but it’s a huge part of one of my favorite food groups…so I don’t stay away from it completely - I just try to limit my intake.
Here is the recipe, lets get cooking!
Ingredients:
Half of a large spaghetti squash, or a whole small one
1 can of black beans drained and washed
1 cup of plain greek yogurt
1 1/2 pounds ground turkey meat
1 package of taco seasoning
1 large can of sliced black olives
1 small package of mozzarella cheese
1) Preheat your oven to 400 degrees Fahrenheit
2) Lightly grease whatever type of cookware you prefer. I used a deep pie dish.
3) Cook the ground turkey meat and set aside (I love seasoning so I used some garlic salt and red pepper flakes)
4) Next, you will cut the spaghetti squash in half (it is a pain in the hiney, but so worth it). Place a damp paper towel over one half of the spaghetti squash and then wrap the whole thing in saran wrap.(I put a little bit of butter on my squash first)
5) Cook the spaghetti squash in the microwave for 12-14 minutes, be careful when you pull it out, it has been steaming and will be very hot.
6) Let it sit on the counter for about 5 mins so it can cool off. After 5 minutes unwrap the spaghetti squash and begin to run a fork through it, making the “spaghetti noodles.” You may want to pat down your noodles before adding them to the other ingredients, they pack a lot of moisture.
Note: There are other ways to cook a spaghetti squash, this is just how I prefer to do it.
If you decide to microwave or bake the spaghetti squash whole, make sure you poke plenty of holes in it first so it can breathe. You do not want a spaghetti squash explosion!
Now it’s time to prepare:
7) In a large bowl mix together the spaghetti squash, ground turkey meat, taco seasoning, olives, and black beans. Mix well!
8) Scoop them into the cookware of your choice and bake for 30-40 minutes
9) Remove your dish from the oven and top with mozzarella cheese.
10) Place back into the oven 10 minutes or until the cheese is melted.
11) Let cool for 15 minutes
12) Serve topped with fresh avocado, and a bunch of corn chips!

You can always add corn, tomatoes, peppers, jalapenos, and/or onions to this recipe if you want more flavor. My fiance is allergic to onions and I don’t like them, so we don’t use onions in anything.
